In case it isn’t apparent yet, I’ve tried lots of lemon-flavoured desserts! I really liked that this cake was flavourful without being too overpowering. Beating the egg whites to soft peaks before folding them into the loaf resulted in a dessert that was lighter than many of the quick breads I’ve previously tried. This Lemon Chiffon Cake is very light and the topping is fresh and mousse-like with a strong citrus flavor. It would be the perfect dessert at the end of a hot day – especially after a barbque or a heavier meal. This cake was very popular, and the whole cake disappeared immediately! At 75 calorier per 1/8th of the cake, this cake is especially great for anyone watching their calorie intake. (more…)

This recipe was an adoption from a Apricot & Orange Roulade recipe, as I had some fresh pineapple on hand – it would be great with any type of fruit puree! At only 70 calories per serving, the cake is light, tropical tasting, and a great way to have some fruit with dessert! I would suggest unrolling the cake and adding the puree shortly before serving – otherwise the cake will absorb the juice from the puree and make the cake soggy.
